Today we’re making pig trotters.

You will need:

Pig trotters, garlic, ginger, mushrooms, salt, Chinese cooking wine, soy sauce, oyster sauce and toufu.

1) Precook the trotters until tender. Fill pot with water and boil, add slices of ginger and salt. Finally dump the trotters inside. Simmer for two hours.

2) Drain the water. Rinse trotters with cold water.

3) Prepare seasoning mixture. Mix salt, soy sauce, oyster sauce and tofu cube. Smash ’em up.

4) Pour everything into the wok and cook with high heat. Allow to simmer for 30 minutes in medium heat.

Wala! Here is the end product

The trotter should look engorged and bloated like the above. Dig in and enjoy.
